Rally Recipes – Simple Vegan Sausage Salad

Ingredients 

Makes 4 servings

3 cups rice of choice

4 vegan sausage links

8 oz. roughly chopped fresh spinach

¼ cup coconut oil

1: 20 minutes before beginning food prep, prepare 3 cups of rice in the rice cooker.
2. Slice sausage into ½ inch chunks.
3. Heat large nonstick skillet over medium/high heat. When hot, add coconut oil.
4. Sauté the sausage chunks for five minutes, stirring and tossing frequently.
5. Add sausage and spinach to rice cooker – the spinach will will tenderize nicely in the heated crock pot.
